A traditional-method sparkling wine from Sorrenberg — Chardonnay and Pinot Noir grown on the biodynamic Beechworth estate at 560m. Made in tiny quantities, it reflects the estate's Burgundian philosophy: restraint, texture and genuine terroir character rather than yeasty richness. Fine persistent bead, creamy autolytic notes and bright alpine-grown acidity.
